The Capellini cutter will cut sheets of pasta into very fine flat noodles that are only 1mm wide (about 1/25 of an inch).
The noodles this cutter produces will be flat, so how thick the sheets of dough are that you feed through the cutter will have a lot to do with how fine the noodle is overall. If the sheets are thicker, you can end with a square shaped noodle that is 1mm by 1mm. But if you feed through sheets that have been rolled very thin, you can end up with a thinner, more delicate noodle. It will still cut them 1mm wide, but there thickness will be less.
